Modern food systems place a significant burden on the environment, accounting for more than 25% of worldwide greenhouse gas emissions. An international research group involving the National Institute for Environmental Studies, Kyoto University, and Ritsumeikan University used several simulation models to evaluate the environmental and economic impact of a “major transformation of food systems”—combining sustainable and healthy diets, reduction of food waste, and improved productivity—if implemented through 2050.
The results showed that implementing such a transformation could deliver benefits for both the environment and the economy. Compared to taking no action, it would halve the increase in greenhouse gas emissions from agriculture and land use, and help curb the rise in food prices driven by climate change mitigation measures.
